# What You'll Need:
→ Bread
01 - 4 slices sturdy sourdough or country bread
→ Cheese
02 - 4 oz sharp cheddar cheese, shredded
→ Kimchi
03 - ½ cup well-drained kimchi, chopped
→ Butter
04 - 2 tbsp unsalted butter, softened
→ Optional Additions
05 - 1 tbsp sliced green onions
06 - 1 tsp toasted sesame seeds
# Cooking Steps:
01 - Spread softened butter evenly over one side of each bread slice.
02 - Place two buttered bread slices on a clean surface, butter side down.
03 - Distribute shredded cheddar evenly on top of each bread slice.
04 - Top cheese with chopped kimchi, spreading evenly. Add green onions and sesame seeds if desired.
05 - Cover with remaining bread slices, buttered sides facing outward.
06 - Warm a skillet over medium-low heat until ready to toast sandwiches.
07 - Place sandwiches in skillet; cook 3–4 minutes per side, pressing gently with a spatula, until bread is golden and cheese melts.
08 - Remove sandwiches from skillet, let rest for 1 minute, then slice in half and serve warm.
