# Cooking Steps:
01 - Preheat the oven to 400°F and line a baking sheet with parchment paper.
02 - Unroll the puff pastry on a lightly floured surface.
03 - Evenly spread Dijon mustard over the pastry if using.
04 - Arrange the ham slices evenly, leaving a 0.4-inch border along one long edge.
05 - Sprinkle grated cheese uniformly over the ham and season with black pepper to taste.
06 - Starting from the long edge without the border, tightly roll the pastry into a log and seal the edge with a small amount of beaten egg.
07 - Using a sharp knife, slice the roll into 16 equal pieces.
08 - Place pinwheels cut-side up on the prepared baking sheet, spacing them slightly apart.
09 - Brush the tops of the pinwheels with the beaten egg.
