04 - Freshly ground black pepper — to taste

05 - Unsalted butter — 1 cup (2 sticks), softened
06 - Fresh flat-leaf parsley — 2 tablespoons, finely chopped
07 - Fresh chives — 2 tablespoons, finely chopped
08 - Fresh cilantro — 2 tablespoons, finely chopped
09 - Fresh basil — 2 tablespoons, finely chopped
10 - Garlic — 1 clove, finely minced
11 - Smoked paprika — 1 teaspoon
12 - Grated Parmesan cheese — 1 tablespoon
13 - Fresh lime juice — 2 teaspoons
14 - Lemon zest — 1 teaspoon
15 - Crushed red pepper flakes — 1/2 teaspoon
# Cooking Steps:
01 - Light the grill and heat to medium-high (about 400–450°F). Clean grates and oil lightly to prevent sticking.
02 - Brush each husked ear of corn lightly with olive oil and season all over with kosher salt and freshly ground black pepper.
03 - Place the corn directly over the heat and grill, turning every 2–3 minutes, until lightly charred on all sides and tender when pierced, about 12 to 15 minutes. Transfer to a platter.
04 - While corn cooks, divide the softened unsalted butter into four equal portions (about 1/4 cup or one stick each) in separate small bowls.
05 - To the first butter portion, fold in 2 tablespoons chopped parsley, 2 tablespoons chopped chives and 1/2 clove minced garlic until evenly combined. Adjust seasoning with salt and pepper.
06 - To the second portion, mix in 2 tablespoons chopped basil and 1 teaspoon lemon zest until homogenous; taste and season with salt if needed.
07 - To the third portion, stir in 2 tablespoons chopped cilantro, 2 teaspoons fresh lime juice and 1/2 clove minced garlic until incorporated; balance with salt to taste.
08 - To the fourth portion, combine 1 tablespoon grated Parmesan, 1 teaspoon smoked paprika and 1/2 teaspoon crushed red pepper flakes, mixing until evenly distributed.
09 - Serve the grilled corn hot with the four herbed butters in small bowls alongside. Offer guests butter to smear directly on cobs or spoon on top, and suggest mixing herbs to taste.
