Instructions
- Step 1:
- Heat the olive oil in a large pot over medium heat. Add the onion and sauté for 3-4 minutes until softened.
- Step 2:
- Add the garlic, ginger, and spices (curry powder, cumin, coriander, smoked paprika, cayenne) and cook for 1 minute until fragrant.
- Step 3:
- Stir in the diced sweet potatoes, carrots, and red bell pepper. Sauté for another 2-3 minutes.
- Step 4:
- Add the lentils, canned tomatoes, and vegetable broth. Stir well and bring to a boil.
- Step 5:
- Reduce the heat, cover, and simmer for 20-25 minutes, stirring occasionally, until the lentils and vegetables are tender.
- Step 6:
- Stir in the coconut milk and simmer uncovered for 5 more minutes to thicken.
- Step 7:
- Season with salt and pepper to taste.
